The Tazawa Lake Pastured Pork that L'api uses is safe as antibiotics, hormonal agents and preservatives are not used during production.
At Tazawa Lake Natural Farm, pigs are grazed on a magnificent beech forest pasture, and raised on imperfect vegetables etc. These pigs, raised without drugs and exercised freely in nature with minimal stress, produce pork that is light and refreshing as the meat has just the right firmness and the fat is sweet and starts to melt at body temperature.
It is shipped out after maturing for a minimum of one year, by being soaked in mineral-rich seawater in a natural environment, and except for salt, no other additives are you used.
And so the uncured ham, made in this way, has a mellow richness and robust flavor that spreads throughout your mouth fragrantly.
