■九州久留米産はかた地どり
L'apiで使用している「はかた地どり」とは、飼育の段階から抗生物質やホルモン剤、保存料を使用していない安全なものを使用しています。品種や飼い方など日本農林規格が定める厳しい基準を満たしたものだけが名乗ることの許される称号の「地鶏」は、国産鶏肉生産量の約1％の特別なものです。
国内の在来種(昔からいる地鶏)の中で、最も美味だと言われている軍鶏(シャモ)と、旨味成分であるイノシン酸を多分に含むサザナミを祖父母に持ち、これに肉づきのよい白色プリマスロックをかけあわせた鶏肉です。
地鶏ならではの噛みごたえ、噛むほどに増す旨味に加え、肉質がきめ細やかでサクッとした歯切れのよさを楽しんでいただけます。
Hakata Jidori from Kurume, Kyushu
Jidori a special title permitted for chicken that satisfies the very strict criteria established by the Japan Agricultural Standards, such as the type of breed, the way of raising etc. It accounts for about 1% of domestic chicken production. The ‘Hakata Jidori’ that L'api uses is produced, from the stage of breeding, without using antibiotics, hormonal agents and preservatives. The grandparents of the Hakata Jidori chicken were fighting cocks (Shamo), said to be the most delicious of the domestic varieties (in the history of Jidori) and Sazanami, which contain large amounts of inosinic acid as an umami taste ingredient. Their offspring was then crossed with a Plymouth Rock. You can enjoy the unique chewiness of Jidori and the increasing umami taste the more you chew as well as the sophisticated texture and crispiness of the meat.
